Sarah Johnson is the director of the Functional Foods and Human Health Laboratory and an associate professor in the CSU Department of Food Science and Human Nutrition.
Johnson’s lab performs clinical and translational research spanning multiple disciplines including agriculture, food sciences, nutrition and more. Their work focuses on establishing and understanding dietary approaches for improving human health, especially when it comes to the gut, metabolism and heart.
Some of her previous studies focused on the correlation between blueberries and heart health and the benefits of reducing saturated fat consumption. This work has been published in Nutrition Research, Food & Function and The Academy of Nutrition and Dietetics.
Johnson earned her Ph.D. in nutrition and dietetics at Florida State University.
