As director of the Fermentation and Food Science Program, Jeff Callaway coordinates partnerships with companies in the beer, wine, dairy and other industries to provide students extensive hands-on science-based experience.
Callaway completed his graduate work at Colorado State University, developing a rapid detection test for Listeria monocytogenes, then oversaw the startup of the biotech company MSBiotec, including the production facility and laboratory.
Rather than focusing on the “bad bugs,” he decided to follow his passion for the good organisms that ferment food and beer, and helped get the FST program off the ground.
Callaway earned his B.S. in medical microbiology with honors from the University of Wyoming and his M.S. in animal science and food science/safety from Colorado State University.
